Why do tea leaves need to have fixation process?
Tea leaves contain a substance called enzymes. Enzymes are biological macromolecules with biocatalytic function, a kind of biological catalyst, which can speed up or slow down biochemical reactions, but do not change the direction and products of the reaction.
Most of the enzymes are composed of proteins (a few are RNA), and their activities are easily affected by temperature and chemical environment, etc. Under the action of high temperature, the protein molecular structure of enzymes will be irreversibly damaged, thus completely dissipating the enzyme activity. The greening process is to take high temperature measures, so that the fresh leaf inclusions are rapidly transformed.
Tea "fixation", it is the use of this high temperature inactivation of the nature of the enzyme, in time to stop the fresh leaves in the oxidase (especially polyphenol oxidase and peroxidase, etc.) activities.
The purpose of tea fixation(kill-green).
1. Destroy the polyphenol oxidase activity in fresh leaves by using high temperature in a short time, inhibit the enzymatic oxidation of polyphenols, and make the inclusions form the color, aroma and taste of green tea, black tea, black tea, yellow tea and pu’er tea under non-enzymatic action and other quality characteristics.
2. Remove part of the water to make the leaves change from hard to soft, which is convenient for rolling and forming.
3. Remove the green grass smell of fresh leaves, and emit charming tea fragrance.

3. Sterilization and mellowing effect is great.
